Food Wars Recipes - Souffle Omelette


Here's another Shokugeki no Soma dish that I cooked. This time it's Soma's souffle omelette, and it's quite delightful to cook and eat! 8D

Now here's my take on this recipe!

Fuwa fuwaaa~
Ingredients:
  • 3 eggs (with the yolks and whites separated in 2 bowls)
  • 3 tbsp milk (full-cream)
  • 2 tsp sugar
  • salt & pepper to taste
  • butter (for frying)

Directions:
  1. Whisk the egg whites until stiff/soft peaks form. 
  2. Add the milk, sugar, salt and pepper to the egg yolks. Beat the yolk mixture to evenly mix the ingredients.
  3. Pour the yolk mixture into the fluffy egg whites. Fold the combined egg mixture with a spatula to mix the yolks and whites evenly. (Be careful not to over mix and lose the fluffyness)
  4. Melt butter in a pan and pour the egg mixture into the pan. (Even out the fluffy parts if needed)
  5. Let the egg mixture cook at medium heat for < 1 min.
  6. Reduce the heat to low and cover the pan with a lid. Let the omelette cook for roughly 2 minutes. (You may see the souffle swell as it cooks)
  7. When you think it's cooked enough, turn off the flame and remove the lid. Put the omelette onto a plate, folding it as it slides from the pan. (I'm not good at flipping eggs lol)
  8. And it's done! 8D

Up there was my first attempt. I whisked it by hand (using a balloon whisk) but it took 20 minutes to get it to that form and my arms hurt from all the whisking.. DX I switched it to an electric whisk in future attempts.


Amazingly the souffle did not collapse like Soma's after a long time had passed. I've heard that that was due to how much the egg whites have been whisked. However, you can see that the souffle and the omelette look like two separate components instead of one whole. I suspect that the yolks were not mixed well with the fluffy whites. The souffle did taste a little bland... and kinda spongy.

Now to look at my second attempt!

This looks more like Soma's souffle omelette when the souffle collapses. At least that's one part of the recipe I managed to recreate (lol). I couldn't use the electric hand whisk for more than 2 minutes straight before risking it overheating or something. (The manual didn't explain why.) This probably affected the quality of the souffle.


But on the plus side, the omelette looks fluffier than it did in my first attempt! 8D I can still feel some of the fluffiness of the souffle despite its collapse. It's still tasty and enjoyable to eat!

Hopefully this recipe of mine will be of some use to those who want to try making this dish. Just be careful not to set the heat too high or the omelette will burn like this one here:

Some Notes:
- You may have noticed that I've not made any type of sauce to go with the souffle omelette. That's because I'm not a fan of tomato sauces. XD;;; But I did add sugar to give it a slightly sweet taste, which is not bad. 8D
- I also didn't use heavy cream because my family hardly uses cream in their cooking. The cream would go to waste. (asian family problems)
