This time we have Soma's apple risotto from his cook-off with his father. It is a surprisingly easy dish to prepare!
Without further ado, let's start with the anime screenshots detailing the preparation of this dish!
Sounds good. And now for my take on this recipe!
Because I've never cooked risotto before, I had to look up ways to cook it and it's surprisingly simple to make! The ingredients for this apple risotto are:
- 3/4 to 1 cup of uncooked rice (any rice would do as long as it's starchy)
- 600ml apple juice (with 99-100% fruit juice)
- 1 large red onion (diced)
- 1 apple (peeled and diced to around 1.5cm cubes)
- 3 strips of bacon (the fattier the better)
- Lemon juice (from half a lemon)
- Chinese rice/cooking wine (a couple tablespoons)
- At least 50g of butter (the more the better)
- Salt & black pepper to taste
And now for the directions!
- Warm the apple juice in a saucepan, enough that steam can be seen rising from it.
- While the apple juice is warming up, fry the bacon in a frying pan. Let the fat ooze out. Put the bacon aside when done.
- Saute the onions in the bacon fat. Add some butter if it's not oily enough.
- When onions are starting to brown, pour the uncooked rice into the pan and stir it with the onions, making sure the rice grains are coated in fat. You can add more butter if there isn't enough fat to go around. Cook until the edges of the rice grains are translucent.
- Deglaze the pan with lemon juice. Add the cooking wine too. (You can use white wine instead, if you're feeling rich. >8D)
- Begin adding the warm apple juice to the rice, one ladle at a time. Keep stirring the rice as it absorbs the apple juice, and add another ladle of apple juice when the juice is fully absorbed. Repeat this process until the rice is cooked.
- Taste the rice and season with salt. You can also add more lemon juice or butter if you want.
- Add the diced apples to the risotto and stir to warm the apples.
- Finish up with more apple juice and/or butter if so desired. You can add smaller strips of bacon to the risotto and mix, or put larger bacon strips on top of the risotto when it's done, as shown in the anime.
- Serve and sprinkle parmesan cheese on top! Also sprinkle black pepper if you want.

The apple risotto was actually quite tasty! It's sweet, balanced with some savouriness from the bacon and cheese. It wasn't as satisfying as fully savoury dishes such as pork ribs, but it's nice as a side dish or a breakfast dish (like in the anime).
I tried making this dish with arborio rice but I couldn't really tell the difference from using the normal asian rice. I guess the type of rice doesn't matter for this dish. Nevertheless, I recommend that you try making this dish at least once. 8D
